CHRISTMAS SALAD

1 can well drained crushed pineapple
1 can well drained fruit cocktail
2 cans well drained mandarin oranges
2-3 cups miniature marshmallows
2 cups seedless grapes cut into small pieces
21/2 cups milk free whipped topping ( whipped to stiff peaks )
4 Tbsp vinegar
4 Tbsp sugar
2 Tbsp corn starch

In a double boiler stir together the vinegar and sugar over medium heat until sugar dissolves. Stir cornstarch into a small amount of water and stir into hot mixture. Stir until thickened. Set aside to cool. When mixture is cooled fold it and the fruit into the whipped topping. Cover and refrigerate. This salad is best made the day before it is served. Decorate with cut up cherries just before serving.

PIZZA    400°

2 cups warm water
4 tsp sugar
4 Tbsp yeast
2 Tbsp oil
2 tsp salt
1/4 cup sugar
5 to 6 cups flour ( 1/2 whole wheat is good )
Pizza sauce ( check labels carefully as many contain cheese)
Pizza meat ( check labels carefully as many contain milk ingredients) If using anything from the deli speak with staff prior to purchasing as cross contamination can be an issue.

Dissolve sugar in warm water. sprinkle in yeast and leave to rise 10 to 15 minutes. In another bowl stir together remaining ingredients. Add yeast mixture. Add flour in small amounts. Knead for 6 to 8 minutes. Put dough in
an oiled bowl, cover and let rise for 1 hour. Knead dough again and stretch dough onto greased pizza pan to desired thickness. Bake in oven until lightly brown approx. 10 to 15 minutes. Remove from oven add pizza sauce and toppings. Bake for 15 to 20 more minutes. Be creative as many toppings for pizza are safe and taste great.

Thumbprint Cookies   350°

1 cup milk free margarine ( !/2 vegetable shortening can be used )
1/2 cup brown sugar
1/4 cup icing sugar
1/4 cup milk replacement or applesauce or ( 2 egg yolks )
1 tsp vanilla
2 cups flour
1/2 tsp salt
Jam for filling
Icing sugar

Mix first 5 ingredients together and work in flour to make a soft dough. Shape into small balls. Gently press thumb into the center of each. Bake approx. 10 to 12 minutes. Remove from pan, fill with jam of choice and
sprinkle with icing sugar.

Another version is to fill cookies with icing sugar while cookies are still hot.

These cookies can be frozen empty and filled with jam just prior to serving.
